serious glou-glou red

This is an extroverted wine, muscular and agile all at once. With red and black fruits on the palate (think: blackberries, rhubarb, and macerated figs), and more earthy undertones (tilled soil, balsam), it walks the line between bright and rustic. Pronounced tannins leave a long, mouthwatering impression — but there’s still enough punchy acidity to cut through gamey salty foods.

Pair it with your sunday supper, or break it out for the dessert cheese course.

vinification & élevage

  • Whole cluster stomp into a large egg for maceration with gentle pump-overs as needed over two weeks.

  • Pressed into neutral barrels for the remainder of fermentation and 12 months of élevage. Racked and blended into stainless for an additional six months before bottling in march of 2024.
