Sparkling wine needs no introduction but this riesling pét-nat is a fizzy, refreshing bottle - pleasantly yeasty with both savory notes and hints of lime and ripe yellow peaches. On the palate there is a finesse to the mousse, which mingles nicely with the wine’s fruitiness. Started in barrel and finished in bottle, the effervescence comes from one fermentation that happened in two places. Serve ice cold - it’s fun, it’s crushable, it’s kind of whatchya want.

vinification & élevage

  • Grapes are picked and gently crushed for an overnight soak.

  • After pressing, there is a brief settling period before fermentation in older oak barrels - the wine is racked off and blended prior to reaching the desired point where it is bottled and allowed to finish fermentation in bottle.
