our ode to the roussillon

Inspired by the Côtes Catalanes in the Roussillon region of France, Poc a Poc - “little by little” in Català - is a macerated muscat that’s immediately charming and uplifting with high tones of lime zest, honeysuckle, alpine flowers, fresh roses, and a hint of black tea.

Spending about two weeks macerating and a subsequent eight months aging in a large foudre. Our dear friend Christian returns to illustrate the label — Castellers assembled to form a traditional human castle.

vinification & élevage

  • Grapes are picked and macerated for two weeks. Pressed and fermented in 36hL old oak cask.

  • The finished wine is aged on the fine lees.
